Head Baker | Elevated Bakery & All Day Café Concept
We are an emerging, Parisian inspired bakery and high end all day café building a refined and technique driven bread and pastry program in Los Angeles. Our breads and laminated pastries are the foundation of the brand, and we are seeking a Head Baker to lead and elevate this core pillar of the business.
This is a hands on leadership role for a seasoned baking professional who thrives in both craft and execution.
Position Overview
The Head Baker will oversee all bread and laminated pastry production, ensuring consistency, quality, and operational excellence. This role leads recipe development, daily production, team training, and cost control while maintaining the highest standards of technique and presentation.
You will work closely with culinary and management leadership to strengthen systems, protect quality at volume, and position the bakery for thoughtful growth and increased production capacity.
This is not an entry level leadership role. We are looking for technical mastery, calm authority, and the ability to build a team that executes with pride and precision.
Key Responsibilities
Lead all artisanal bread and croissant production
Oversee laminated dough programs and fermentation processes
Manage production schedules and inventory
Monitor food cost and labor efficiency
Train and develop bakery staff
Maintain health, safety, and sanitation standards
Collaborate cross functionally to ensure a cohesive guest experience
Qualifications
Minimum 10 years professional baking experience
Minimum 5 years in a leadership role
Deep expertise in artisanal breads and laminated dough
Strong operational and organizational skills
Experience in high volume production environments
ServSafe certification required
